Ingredients:
- 1 pound of medium-sized raw Shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 lemon, juiced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup kalamata olives, pitted and halved
- 1/4 cup sun-dried tomatoes, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
Instructions:
Step 1 – Preheat your oven to 400°F (200°C).
Step 2 – Whisk together the olive oil, lemon juice, oregano, thyme, salt, and pepper in a small bowl.
Step 3 – In a large mixing bowl, toss the Shrimp with the olive oil mixture until well coated.
Step 4 – Spread the coated Shrimp out onto a baking sheet.
Step 5 – Scatter the olives, sun-dried tomatoes, and minced garlic over the Shrimp.
Step 6 – Bake the Shrimp in the preheated oven for 12-15 minutes or until they are pink and opaque.
Step 7 – Remove the baking sheet from the oven and sprinkle the chopped parsley over the Shrimp.
